Yep, it was GOOD.

The pizza from last night was gooooooooood. Not much of a recipe, but here you go:

Smoked Mozzarella, Zucchini, Cornmeal Crust Pizza

• 2 frozen cornmeal crusts from Vicolo Pizza (purchased at our Co-op)
• some canned pizza sauce (I think we used Eden brand?)
• 3 small zucchinis
• some butter
• a block of smoked Mozzarella cheese
• dried basil

I first sauteed the zucchini rounds in a bit of butter for a while and then layered them over the sauce on the frozen crusts. (Leaving half of one pizza without the green vegetable, since its presence would have seriously diminished the chance of The Boy consuming said pizza.)
Then I topped both pizzas with a whole bunch of grated, smoked Mozzarella cheese, sprinkled some dried basil on top and popped them in the oven (425 degrees) for 15 minutes. They came out looking like this:
YUM.

We often make these super simple pizzas at home with different toppings, using the frozen crusts and store-bought sauce. It feels like cheating sometimes, but Dan and I always agree that they come out tasting way better than delivery or even our favorite pizza place. Another favorite is the black bean pizza on this cornmeal crust modeled after a recipe from the Co-op (black beans, corn, salsa, Cheddar cheese...) Double YUM.

I also just baked two quiches today (one to share with friends tonight and one to save for later) and thought you all might like this recipe too. It comes from my cousin and is an easy favorite.

Quiche "Lorraine"

• a bunch of your vegetable of choice*
• 1 1/2 cups grated Swiss cheese**
• 1 9-inch pie crust, unbaked
• 3 large eggs
• 1 cup heavy cream or 1 1/2 cups milk
• salt
• pepper
• spices of choice (dry mustard or basil or thyme...depending on your ingredients)

Sprinkle veggies and cheese in pie shell.
Beat the remaining ingredients and pour over the veggies and cheese.
Bake at 375 degrees for 45-50 minutes or until firm.

* I used asparagus and leeks (sauteed the leeks first in some butter for a few minutes to soften) tonight. But my traditional favorite is frozen broccoli and diced red pepper. The original recipe calls for diced ham pieces, but since I'm a vegetarian, I don't make it this way.

** I used Baby Swiss tonight instead of regular Swiss. You can use any type of cheese that would compliment your ingredients.

Oh my does that look and sound wonderful!!
I am not a vegetarian but do love a veggie pizza the best. I usually have to make half of the boys pepperoni pizza with veggies instead. I do get them to eat a salad with theirs..but still.
The black bean version sounds yummy too!!!

Hi Catherine, Its been a while since I stopped by, the pizza looks yummy. Farm life is picking up here, lots of busy-ness. Spring is still not really here, 9 degrees last night! But Sunny now!
