It's definitely tiring to start canning food when the kids go to bed and end up staying up late to get it all done, but I can now officially tell you all that it's the better choice vs. trying to can when the kids are AWAKE* and you're the only adult present. I'm not quite sure how I did it this morning, but I turned these:
into these:
Both kids are napping now, the house is relatively quiet and I'm ready for my breakfast at 1:37 p.m. We'll not talk about the state of the kitchen, though.

*Awake means hungry all the time, crying here and there, wanting to play, needing help with runny noses, lots of diapers...you get the idea...

You know what? My youngest child is now 11 and I STILL do most of my canning at night after everyone else is in bed. When they get older you get the "please drive me to ....." and please check my homework, please make me a snack type interuptions and wrestling matches to break up.sigh. BUT...I am happy to be a mom...even without sleep. And look..we have beautiful jars of healthy home canned goods to show for it, right??
I don't have kids and canning is still complicated for me to get done. I tell you what, though: that apple sauce is going to taste twenty times as good as any other in the middle of the Minnesota winter. =)
