What's for dinner?

I looked into the refrigerator yesterday at 4pm and this is what I found: fresh organic dinosaur kale and carrots. Hmm. Just enough time to get the carrots peeled and into the oven for roasting. The kale turned into one of our favorite dishes from Martha (except without the bacon, vegetable broth instead of chicken broth, parmesan instead of fontina and regular pasta instead of whole-wheat..."inspired by!")

The kitchen started smelling really good once this garlic got going with the kale. I started to wonder if Jackson would maybe, possibly decide to join us for dinner? Late nap (4:30-6pm) aside, I was wondering if he would be able to get over his aversion to homecooked carrots and actually eat the same dinner as his parents at the same time. He did it the night before when we went out to eat with my family for one last Jackson birthday celebration, so there was definitely a chance that he would eat with us again.

As I was pondering all of this, dinner was done and we dove in. Jackson loved the carrots! The kale was still too much for his semi-toothless mouth to handle, but he devoured the carrots. I'm not going to get too cocky and think that he is actually a regular vegetable eater now, but we may be on to something. Stay tuned...

The last of the Birthday News brings us to this incredible show of generosity from our friends and family. In lieu of gifts for Jackson, we asked everyone to bring a gift for a child in need to his party and we were shocked and amazed by what we saw. We are excited to donate all of this to the Greater Minneapolis Crisis Nursery to help out some kids who didn't get the same good start as our kid. If anyone wanted to donate with Jackson's birthday party but didn't get around to it, donations are always accepted. That is a fantastic idea for birthdays. We do a similar thing for Christmas, but I've never thought to do it for birthdays.

Note to all: This dish--I almost typed spaghetti instead of vermicelli--is rapidly becoming my favorite. The home-made mac & cheese is good. The vegetable and bean pies...you usually don't go wrong when you step into the Mandle Dining Room. But this dish--which looks so simple and easy. It REALLY stays with you. Highly recommended.

What a generous and lovely idea. And, that kale dish does look delicious. I can't believe that you can buy dinosaur kale there. I've always had to grow it. Never seen it in stores around here.
